Harriet's pancakes


Our favorite and most used recipe of all times is this one - breakfast pancakes, from scratch of course. They are really easy to make and taste amazing! The recipe is also pretty bullet proof, so much so, that my husbands takes turn to make them every other weekend.

Ingredients :

1 cup of flour

1 tsp. vanilla sugar

1 tsp. baking powder

pitch of salt

1 cup of any kind of sourmilk produkt like yogurt, sour cream or simular - we prefer to use buttermilk.

1 egg

1/2 cup of milk

1 tbsp. butter

1 tbsp. cooking oil

Instructions :

1 . Combine all of the dry ingredients in a bowl.

  1. Mix the milk and egg in a cup and por into the dry ingredients, then poor in the sour milk produkt and combine everything.
  2. Melt butter and cooking oil on a pan, once melted stir in with the rest.
  3. Cook pancakes on medium heat until golden, turn once you start to se bubbles in the dough.

Enjoy with your favorite topping, mine is homemade Nutella and strawberries, but plain syrup is always a safe bet.

made a double portion, because we had guests over - but usually one portion is enough for our little family of 3 .

This is the same recipe we use for our crowd favorite blinis - although then we leave out the vanilla and butter and use a bit less milk. Topped with salmon and sour cream dressing for lunch or rhubarb jam, cream and lemon sest for dessert!
